{Eat} "Healthier" banana bread

I really, really love banana bread I would eat it every day if  I could but unfortunately banana bread has a lot of empty calories, on average 500 calories for the average cafe banana bread. I first came across an alternative recipe for a healthier version of banana bread when I did the 12 week challenge and since then have experimented with the recipe and merged it with a few other banana bread recipes to finally come up with something I really enjoy and thought I would share in case you too are a recovering banana bread addict.

Ingredients
500 grams wholemeal self raising flour
1 cup of oats
2 teaspoons of cinnamon (I really like cinnamon so one teaspoon might be enough for most people)
2 eggs
2 teaspoons of vanilla essence
A squirt of honey - I never measure this just plop some in maybe like a quarter of a cup.
3 mushed up bananas
1 cup of lite milk

Method
1. Preheat oven to 180 degrees.
2. Then I pretty much put everything in a big bowl, the dry ingredients then add the wet ingredients and mix it  all together and then spoon it into two long cake trays.
3. Cook for approximately 40 minutes then let cool, or enjoy yummy and hot.

I find this bread quite dense and chunky, its not going to look pretty like your standard banana bread. Brendan suggested that I process the oats so its not so chunky but I like the consistency but if you want something a little smoother its definitely a good option. My favourite way to eat it is with a drizzle of honey some strawberries and a dollop of greek yogurt!

  1. so yummy! banana bread is on the things you can actually make decent gluten free so that's a nice treat for me although i haven't made it in months... i like chocolate chips in mine, so it's especially not healthy!

  4. I love banana bread but sadly I can't stand the smell of bananas, so we rarely have them in the house. I usually buy and freeze in preparation for smoothies or cakes. This recipe sounds delicious and I'll definitely keep it in mind as I'm trying to eat a little healthier at the moment.

  7. And it was delicious! Thanks for sending me home with some! I made some on the weekend with almond meal, it was ok... I'll work on the recipe a bit more and send you home with some when it's a little better xx
